My hunka hunka has been asking for salmon patties. (Excuse me while I contain my nausea) I have these horrific memories of my mom cooking salmon patties. That smell is up there in terrible dinners when she cooked liver and onions, or sauerkraut and weiners. This girl just cannot stomach that odor. AT. ALL. Thankfully she never forced me to eat any of it.
I had some crab meat in the fridge I was going to use for some spicy dip my hunka hunka likes. Normally I make that for him at Thanksgiving, but different times going on now. That meat gots me a-thinking I reckon I could substitute salmon for crab meat. Hmm…
So I did.
I chopped the flank crab meat to make the pieces easier to work with.

I also chopped up half red and orange bell peppers. You can use any color. I have expressed before in my food blogs that I never buy green bell peppers. Not a fan. I combined the crab meat and bell peppers in a bowl. I added a little bit of mayo, spicy brown mustard, Parmesan cheese. (My measurements are not exact, even though I will post the recipe at the bottom.) You need a binder. Make sure to add 2 eggs. Mix well with your hands, yes, your hands.

Shape into patties. This made four decent patties.

I heated a skillet with olive oil. Once I could see the shimmer of the oil, I gently added the patties. Be careful while they are uncooked, as they could fall apart a little before the heat seals the bottoms. Once they had a decent color on the bottom (5 minutes or so), flip them over and cook other side.

You can put on a paper towel to soak up any excess oil that may be on them.

Serve with tartar sauce – my secret obsession.
I was thoroughly impressed with these, as they were the first ones I have ever made. I keep debating in my mind if I will ever make him salmon patties. I could crack a window. If my hunka hunka is lucky, he will get them. Until then, he can enjoy these tasty delights.

Bobby’s Crabby Crab Patties
- 1 pkg crab meat
- 1 chopped bell pepper
- 1/3 cup Parmesan cheese
- 2 tbsp mayo
- 2 tbsp spicy brown mustard
- 2 eggs
- 2 tbsp olive oil
Chop your crab meat and bell pepper. Combine all ingredients and form patties. Should make four patties.
Heat olive oil in skillet. Add patties and cook for about five minutes on each side
Drain on paper towel.
Serve
