Peanut Butter Cup Fudge

For at least ten years, I have been making this amazingly delicious peanut butter cup fudge. I used to call it Reese’s fudge, but I don’t always use Reese’s cups. I cannot even tell you where this recipe derived from as I have had this printed on a Word document for so many years. My sweet elderly friend in San Diego makes it multiple times a year…as she tells me when she makes it and always thanks me for the recipe.

I will post the actual recipe at the bottom, but I tripled the recipe this time. I want to make a good impression at Christmas with my boyfriend’s parents and sons. (I hope they like me!) haha.

Here are my ingredients – tripled…

I love Aldi’s peanut butter cups. They are so creamy and delicious..and they are unwrapped. Unwrapping all of those individual cups are such a tedious task. I’m all about convenience. Line a typical 8 x 8 glass dish with wax paper and spray with cooking spray. I highly encourage the spray as it prevents sticking.

In a large microwavable bowl, combine 3 cups of sugar, 1.5 sticks of butter, and 5 oz. evaporated milk. Put in microwave for 2 minutes. Remove and stir. Place back in microwave for 4 more minutes. Remove and stir. Then zap for 1 more minute. Stir well when you remove. This helps melt the sugar well and evaporates any excess water from the mix.

Since I tripled this recipe, I used a large mixing bowl for the finishing details. Pour peanut butter chips in the bowl and stir with your microwaved mixture. If you want creamier fudge (and I always do!), add a jar of marshmallow cream. YUM CITY!

Once everything is blended and melted all together, you will want to carefully pour over your peanut butter cups.

Put in fridge and allow to cool. Your fudge will harden.

I like to pull it out and empty the fudge onto my counter upside down so I can see the peanut butter cups. Makes for easier cutting.

This fudge is so amazing. I eat until I make myself sick! I’m glad to have this treat done. Tomorrow I will make my candy cane truffles. I wrote a blog a few years ago..click HERE if you want that recipe. I think I’m going to be the family favorite this year!

Reese’s Peanut Butter Cup Fudge

Directions:

First you will want to line the pan with Wax paper and Spray with cooking oil.
Using Reese’s candy of any size, put one layer over the wax paper.  (I used the small bites so i didn’t have to remove wrappers)

Prepare fudge:
3 Cups Granulated Sugar
1.5 Sticks of real unsalted butter
5 oz. Evaporated Milk

(Put these three ingredients into the microwave for 2 minutes. Remove and mix,

put back into the microwave for 4 minutes, Remove and mix. Once more in the microwave for 1 minute).

Add: 1 bag of Reese’s Peanut Butter Chips and mix until all chips are melted. Pour over prepared pan with Reese’s Cups.

Put the fudge in the refrigerator until completely cooled and set, it will be a very firm fudge.

For creamier fudge:  Add 1- 7 oz jar of marshmallow cream, mix well. Pour over prepared pan of Reese’s cups.
